The Deep27 – History of the Design The Deep27 was developed as a development of the Deep45 dripper, which featured a narrowed 45° bottom angle. This solution increased filtration efficiency and worked perfectly for brewing 3 to 7 cups of coffee, but it did not provide optimal conditions for a single cup. Growing interest in single-cup coffee brewing and the numerous voices of the coffee community in Japan and other countries prompted the creation of a new solution. In response, the CAFEC Deep27 was created – a dripper designed for maximum extraction control, deep filtration, and a full flavor profile in a single cup of coffee. The entire system is complemented by a dedicated Abaca+ Deep27 paper filter, which supports a fast, even, and stable water flow during brewing. Why the Deep27? The design process for the Deep27 dripper took over 5 years and included hundreds of tests and analyses. The goal was to develop the ideal dripper angle for an alternative single-cup brewing option. Two elements proved crucial: The proper filter layer. One cup of freshly ground coffee creates an optimal filter layer, allowing for even extraction and stable results in every cup. CAFEC's ideal extraction speed. The rate of water infusion and the flow rate of the infusion have been precisely balanced, allowing for the extraction of aroma, sweetness, and clarity without unwanted bitterness. Years of research resulted in the development of a 27° angle, which allows for a noticeably richer, sweeter, and more complex flavor in a single cup of coffee.
